Recipes: Hibiscus Honey Lime + Blackberry Paletas
An ode to a HOT summer….
PALETAS.
Ice cold,
dripping down fingers and chins,
thirst-quenching and leaving you with grins.
Mexico-inspired.
Yes, this heat has me dreaming of soft sandy beaches
and cold ocean swims.
Here’s my ode to 100-degree days and warm balmy nights.
Summer.
5 hibiscus tea bags
64oz hot water
4-5 tbsp raw honey
2 limes, juiced
12 blackberries, sliced
Bring 64oz of water to a boil. Place hibiscus tea bags in a large glass pitcher – I used a 2 liter mason jar. Pour hot water over the tea and allow to steep for 5-10 minutes. While the water is still hot, stir in the raw honey to your desired sweetness. Place the jar in your refrigerator and allow to cool while the tea continues to steep for 2-3 hours. Once cool, stir in the lime juice.
Slice the blackberries and place them in the bottom of the popsicle molds. Fill each mold to the top with the hibiscus tea mixture. Set the popsicle sticks and place them in the freezer to set. Once frozen, dip the molds in hot water to release and remove the popsicles. Enjoy melty popsicles and sticky honey hibiscus-covered hands on a hot day!
